Getting creative with handcrafted coffee

BUFFALO, N.Y. (WIVB) – Rob Fussell takes coffee very seriously. You rarely see the head barista at Sweetness Seven Cafe on Grant Street without an Americano in his hand.

“I think this is the beginning of the day for most people, when they get their first cup of coffee, so I like to say good morning. So matter what time of the day it is. I’ll say good morning.”

“I start work usually at 6am,” he said. “But I usually wake up around 3am, 4am, just to get enough coffee in me to make coffee for everybody else. Because the most important cup of coffee isn’t your coffee. The most important cup of coffee is my coffee.”

But his customers probably wouldn’t believe that. Rob prepares every latte to perfection. He even turns the foam into latte art.

“‘That’s beautiful. That’s a great piece of art. I don’t want to put anything in it because it’s going to destroy the art.'” Rob said when asked how people usually react to seeing the designs in their coffee. “And then I go, I keep all my real art in the basement, so it’s fine, so do whatever you want to that cup of coffee.”

As a certified member of the Barista Guild of America, Rob can tell a lot about someone from their coffee order.

“Most go to professionals want the red eye, they want the most amount of caffeine as possible,” Rob explained. “The people who have time to be leisurely have the time to sip on a latte throughout the day. I find people who order americanos are in the know. They know that that’s the drink to order.”

With this barista, the jokes flow just as freely as the coffee he pours. And at the end of a long day, he likes to wind down with … What else?

“I pretty much drink coffee nonstop till about 3pm, 4pm, and I’m in bed by 6 or 7 if I have to wake up for work. Usually I’ll top it off with a nice decaf coffee at night after dinner,” Fussell said.

As long as there’s milk to steam and espresso shots to pull, Rob will be right here behind the counter.

“You’re always learning and it’s always new. More cafes are opening up in Buffalo within the year, year and a half there’s going to be a lot more places to get great cups of coffee. Coffee consumption is going up and up and up. Everybody drinks coffee.”
