Easy recipes to spice up Thanksgiving leftovers

BUFFALO, N.Y. (WIVB)- Chef Bryan Mecozzi from Black Iron Bystro in Buffalo joined us live in the kitchen to share some easy recipes for Thanksgiving leftovers.

Turkey, sweet potato, and kale egg rolls

  • Add leftovers from Thanksgiving in an egg roll wrapper and seal with egg wash
  • Fry in hot but not smoking oil until desired color
  • Average cook time about 2 minutes

Turkey Day leftover quiche

  • Use leftover stuffing as the crust
  • Mix 5 eggs with 3/4 cup milk
  • Add salt to taste, along with 1/4 cup cheese of your choice, turkey, and leftover vegetables
  • Back at 350 degrees for 35 minutes
